Crock Pot Chipotle Chicken

I was looking for a new take on chicken tacos and love healthy slow cooker recipes. This was really delicious and I side-stepped the cheese and sour cream and still loved it.

I followed the recipe pretty closely, but next time, I think that I will rinse and drain the corn instead of just dumping the can and will add rinsed and drained black beans to the mix as well.

Christmas Cookie Kookies

We made Christmas cookies this year and had a wonderful time doing it. It cracked me up that the end product looked so colorful but you cannot tell who decorated which cookies. Clearly, frosting is an equal-opportunity medium. (Click on the below image to view full-size)

Buffalo Chicken Dip (‘aka’ CRACK DIP)

Ingredients:
2 cans of chicken
½ to 1 cup Franks Hot Sauce
2 bricks of Cream Cheese
2 Cups Ranch Dressing
1 bag of Sharp shredded cheese (small bag)

Timed Prep:
Drain cans of chicken add to bowl with Frank’s Hot Sauce. Mix well. Let sit in fridge for an hour.

Assemble & Cook:
Preheat oven to 400 degrees.
In medium sauce pan, blend cream cheese and ranch dressing. Melt and mix well. Once creamy, add 1/2 bag of cheddar cheese.

Mix with chicken and hot sauce. (Option: add more hot sauce at this time for extra kick.)

Add to pan or baking dish and cook for 20 Minutes. Take pan out, add the remaining bag of cheese and continue to bake for 15-20 minutes.

Serve warm, with tortilla chips.

I’ve been able to cook meals regularly enough, now that I stay-at-home, to get a good feel for herbs and spices and what they do. Anymore, I find myself saying, “You know what this needs? Oregano!”

I add onions, minced garlic, and pepper to hamburger patties; put white pepper and diced jalapeno in my pimento cheese; even found myself pimping out my hot ramen with some things this last weekend. And I usually use the palm of my hand instead of a measuring spoon. HOW DOMESTIC!

But I am not claiming to be fancy because my top three flavor enhancing ingredients have not changed. My classic, personal ‘trifecta of condiments’ are: peanut butter, ranch dressing, and hot sauce. Once you are working with these ingredients, the food becomes instantly amazing, no additional spices or herbs needed.
